I didn't bother making meatballs so I just stir fried the meat mixture, taking care not to break it up too much and voila! it self-formed into meatball-like chunks with crispy brown edges. I also added a shredded cucumber to the marinated veggie mix and garnished with thinly sliced serrano chiles. It was delicious! I think it would be great over vermicelli rice noodles too.I made this pretty much as written, adding a bit more soy sauce and some scrambled egg to the rice.
