1 cup fresh cilantro leaves 1 teaspoon distilled white vinegar1 whole chicken, 3 1/2 to 4 pounds 1 teaspoon freshly ground black pepper2 tablespoons vegetable or canola oilCombine jalapeños, ají amarillo , cilantro, garlic, mayonnaise, sour cream, lime juice, and vinegar in the jar of a blender. Blend on high speed, scraping down as necessary, until smooth. With blender running, slowly drizzle in olive oil. Season to taste with salt and pepper.
Combine salt, cumin, paprika, pepper, garlic, vinegar, and oil in a small bowl and massage with fingertips until homogeneous. Spread mixture evenly over all surfaces of chicken.When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes.
Transfer chicken to a cutting board and allow to rest for 5 to 10 minutes. Carve and serve with sauce.
