Using a mortar and pestle, bruise the chilies, lemongrass, galangal, shallots, and Makrut lime leaves. Add them to a medium-size pot along with the hot sour coconut base and bring to a simmer over medium heat.
In a small bowl, stir together the coconut cream, fish sauce, and white pepper. Marinate the salmon fillet in the mixture for 5 minutes. The salmon will continue to cook while resting; I like to serve my salmon at medium-rare to medium. If you desire it more well-done, you can leave it on the grill for about 3 more minutes to cook it medium-well, bearing in mind that it will also cook further when added to the soup.
Scrub and shuck the oysters, taking care not to spill the oyster liquor, and place on the serving platter.
