Cook this: Chayote, pork and shrimp stir-fry from Secrets from My Vietnamese Kitchen via nparts
Our cookbook of the week is Secrets from My Vietnamese Kitchen by award-winning Montreal novelist Kim Thúy. Over the next two days, we’ll feature more recipes from the book and an interview with its author.The star of Kim Thúy’s speedy stir-fry is the chayote, a member of the squash family. “The texture is so, so interesting and so easy to make. You just sauté – it takes five minutes to cook,” she says.
“It’s so simple but it’s so tasty because of the marriage between the pork and the shrimp,” Thúy says of the recipe. “I chose dishes because they are daily food; things that we eat every day that you rarely find in restaurants because they are very simple. But also because they introduce that idea of combining things that we rarely do in Western traditions.
