Cook this: Caramel pork from Secrets from My Vietnamese Kitchen via nparts
Our cookbook of the week is Secrets from My Vietnamese Kitchen by award-winning Montreal novelist Kim Thúy. Tomorrow, we’ll feature an interview with its author.
“I know it looks very simple but I don’t know why it’s so good,” Kim Thúy says with a laugh. “It’s just delicious. I think it’s the fish sauce. The fish sauce changes everything.” Caramel pork is a classic dish for Vietnamese New Year , she explains. As tradition has it, you’re not supposed to cook on New Year’s Day, and the dish has staying power; the salt in the fish sauce and sugar in the caramel preserve the meat.
Step 2Increase heat to medium-high, then add the garlic, onions, and pork belly. Cook, stirring constantly, for 5 minutes.
