Six years ago when Bill Kokos took over Sierra Madre Saloon in Hampden Township, he initiated practices practically unheard of in the restaurant industry.
Kokos, who comes from a corporate background working at Harte Hanks marketing company, offered to pay 50% of his employees’ dental and vision insurance and implemented incentives and higher pay.
