She worked at a couple of food establishments in Orangeville and had a fish and chip place with her dad and later a ma and pa shop known as Big Daddy’s Diner. It was then that they were approached about buying a takeout, gas station and convenience store in Cox’s Cove. They decided to give it a try, and the East Coast Junction, which includes a food truck, was born.Although she wanted to be close to Hope and Stella, Trifina was still not looking at a permanent move because Rebecca and Reese were still in Ontario.
Trifina Henderson and her husband, Jeremy Henderson, are hoping they’ll find the same success in restaurant industry in Corner Brook as they have in the Ontario. Along with their children, the couple, is getting set to open a new restaurant, The Shipyard Eatery, in the Millbrook Mall in Corner Brook. – Diane Crocker/SaltWire“We had a little family pow-wow and decided we’re going to do this and we’re going to do it as a team. It seemed like a big challenge, but we were up for it,” said Trifina.
