WHEN CHEF Tomasz Skowronski visited family in Warsaw each summer as a child, his grandmother would welcome him with cabbage rolls napped in a bright tomato sauce. “Most people would say it’s a wintery, comfort-food dish,” he said. “But stuffed cabbage in summer makes sense to me because that’s when the best tomatoes are happening.”
