Experimental Error is a column about the quirky, comical, and sometimes bizarre world of scientific training and careers, written by scientist and comedian Adam Ruben.The other day, I happened across a viral video of a Michelin-star chef sharing what she does at her job. I had always assumed chefs exclusively perform highly creative, inspirational work—designing flavor combinations, inventing sauces, devising ways to turn ordinary foods into foam.

And that seemed wrong. I felt like an impostor, taking the easy way out, enjoying the brainless bits and not exactly looking forward to the time I’d have to take all of the data I was accumulating, sit down, and actuallythem. Surely, I thought, good scientists do the opposite. Surely they dread the data gathering but love the cerebral part.

At the same time, there was undeniably something satisfying about the manual work. It meant I had accomplished something tangible. So many accomplishments in science are vaporous—theories may not be supported, paragraphs may be deleted from a paper, thoughts may lead nowhere—and you leave the lab feeling like, even though you’re mentally exhausted, you haven’tanything. But those vials needed to be labeled, and I labeled them. Those gels needed to be poured, and I poured them.
