Given how much of a workout a pair of kitchen shears can get, it helps to know which are the best.
This seemed like as good a place as any to start my tests, since any pair that choked would be quickly disqualified, allowing me to rapidly narrow the field. I wasn't wrong: Five pairs hit the trash heap after snagging their blades on my test chickens. In some cases, they could hardly complete the task; in others, they did it, but not easily. With my remaining roster of shears, I moved on to the next test.
As it turned out, all the scissors that did well in the chive test were the same ones that aced this test. The losers' disqualifications were confirmed.Now down to a list of four pairs of shears, I needed to find a way to narrow my selection further. The hinge was the deciding factor. Some kitchen shears are built like traditional pairs of scissors, with a bolted hinge permanently holding the two sides together.
As a lefty, I'm also acutely aware of just how much using a pair of scissors in one's left hand can exacerbate poor performance. Most scissors are designed for right hands; use them in your left, and the thumb and fingers exert pressure in the opposite directions, pushing the blades apart. A seemingly decent pair of shears with even a very subtly loose hinge, one that a righty would never notice, will be discovered by a lefty in a matter of seconds.
