A snack worth watching sports for.
I came up with these little fried bites of heaven for a holiday episode of The Feed, mywith chef Marcus Samuelsson and comedian Max Silvestri, in 2014. Combining my family’s cherished latke recipe with the fillings from a Reuben sandwich, I created the ultimate Jewish deli delight. What I love about this recipe is that while it’s made up of familiar components, the “mashup” brings them together in a modern, unexpected way, giving them new life.
The dish hinges on the latkes, which are made super light and crispy by using the shredding attachment of a food processor for the potatoes and onion, instead of grating them with a box grater as most traditionalists would have you do. This creates longer, thinner stands. I also incorporate finely chopped dill into the simple batter, which I believe compliments the potato flavor beautifully and sets the savory tone for everything else.
Each golden potato pancake is topped with my take on Russian Dressing, using sour cream as a base mixed with horseradish, a little ketchup and hot sauce; a layer of salty, beefy pastrami; and, finally, a crunchy, bright slaw of celery, green apple and cabbage tossed in an apple cider vinaigrette. The latkes can be made up to two weeks ahead and easily frozen—just warm them slowly in the oven before topping with the other components before serving.
