But where you really want to use this stuff is on Italian food. "People don't think of honey as Italian, but there's a whole honey culture there," my colleague Mindy Fox notes. A big part of that culture involves drizzling honey over salty, delicious things like salumi and cheese. And if you're me , you take it one step further, drizzling it any place where cheese and salumi combine, like on flatbreads and pizzas.
Could you use regular honey for this? Definitely. But spicy honey offers "a lot more dimension than just honey alone," Mindy says. "It's a whole other thing." Making spicy honey is as simple as stirring a teaspoon or so of those flakes into a few tablespoons of honey. For a more uniform spiciness, heat the honey, throw in the red pepper flakes, and let the two warm up together for a few minutes. Or just stir some red pepper flakes into a jar of honey and let them hang out there permanently. The longer the two mingle, the spicier the honey will become.
