Lactose intolerance didn’t slow historian Alexander Hughes down as he munched through many pies in Toronto and Buffalo.

When Etobicoke-based Alexander Hughes first started grad school, he had no idea he’d spend the next four years eating his way throughFrom the beginning, Hughes pictured spending his PhD program at York University studying American history — not embarking on a multi-year pizza quest across Toronto and Buffalo, New York.

“In 1950, Toronto and Buffalo were actually rather similar cities, they had similar percentage of Italian immigrants and also similar economic output,” Hughes said. “However, by 1990, Toronto would become this prosperous, multicultural metropolis with strong economic output, and Buffalo becomes a regional American city which suffered from industrialization and protracted population loss.”

“Food history is always a very accessible and interesting way for people to hop in and start exploring the past,” he continued. “I actually became lactose intolerant over the course of the project,” he said. “I don’t know if it’s from too much pizza or if I just hit that age.”
