Feta & sweet potato are our favorite celebrity couple.
My room mate that hates vegetables named this his sandwich of the year for 2019. The textures are amazing and the flavor is bomb. Plus, it's healthy!I don't understand how this is so good. It is a meld of flavors that speaks to me on a cellular level, and as a not-very-fluent new cook I don't understand it, but I also don't understand what happens when we die, and I'm okay with that.
To get nicely blackened spots, it took about 6 minutes on the stovetop and I used a fully fifteen minutes to finish roasting to perfection. I used a combination of herbs from my garden to top. Before eating, I took some pictures to share since this is a pretty sexy sandwich ;)Dayummmm this was a good sandwich! There are a bunch of steps and bowls that are all worth the time and dishes. Would definitely make this again.Oh man! What a great sandwich.
