Red Wine–Braised Chicken with Chorizo and Chickpeas

So heres the thing... This recipe has all the makings of a really fine meal, and all of my problems with it are my own. I like my chicken thighs cooked we'll enough so that all fat renders out and the skin becomes utterly snack like. At that point the resulting braising juice takes on that succulent almost gelatinous mouthfeel and the bones fall out of the meat. And... that meat is so tender that it cannot even resist the slightest touch of a fork without giving way entirely.

Typically I braise 8 thighsin a humongous 15 inch earthenware cazuela which has the space to allow me to tuck everything in closely and still allow enough room so that the liquid level is such that my skin stays really, really crispy even when I tuck in lemons and other goodies. I am sure the tight squeeze only helped create the rubbery quality that I do not look for in chicken. However, the beans were so SUBLIME.
