As a chef, I am inspired by many things. Mostly I can say inspiration is from learning and discovering new ingredients, new techniques, and old traditional recipes. Another one of my favourites I love using during our summers are the padron peppers grown by local farmer Miles Smart of Cherry Lane Farms in Richmond. Also invest in a mortar and pestle and make your own chili garlic paste. You’ll find the simplest things make the world of difference.
Heat a wok or non-stick pan on high heat. Use about 1 tbsp oil to fry shallots. Add garlic, chili and prawns or chicken. Whisk one egg and add with the rice and sauté together. Once rice is fragrant, add fish sauce, soy sauce, and ketjap manis. Add more fish sauce of you like salty, more ketjap manis if you like it sweet. Fry an egg in a generous amount of oil until crispy but still runny on the inside. Top rice with egg and serve with chili sauce.To make ketjap manis, combine 1/4 cup soy sauce and 1/4 cup brown sugar in a saucepan. Simmer on low heat until slightly reduced.
