The owner of three wineries including Cadenza Vineyards has one of the oldest, if not the oldest, plots of Cabernet Sauvignon growing in the state.

This is the backstory for a question posed to Helrich recently about Cabernet Sauvignon, a grape that fits very well on a tasting room list or in a restaurant but not as comfortable in a Pennsylvania vineyard depending on the specific site.“Having grown Cabernet Sauvignon for over 20 years, I have a lot of thoughts,” he wrote. “Couple that with having an old vineyard and replanted vines, and then a brand new planting, I can say it’s hard to pinpoint what works in Pennsylvania.

Still, it’s safe to say that a lot more sell it who don’t grow it and source the grape from elsewhere, including the West Coast, because it’s a known commodity among wine drinkers as a varietal or a blend and one that can be priced higher than anything else in the portfolio. Helrich said he sees Cabernet Sauvignon and Petit Verdot in the same light, both among the “harder” of the five Bordeaux varieties. “I’ve always felt that Cabernet Sauvignon is missing a full mid-palate, but not as much as Petit Verdot is missing it. I think that’s a more personal preference of mine.

Bottom line, he said, his recommendation for Pennsylvania growers is to only plant Cabernet Sauvignon if they “have a site that is really extraordinary. Sure, it has name recognition, but in sub-par sites or in sub-par years, the wines are light and uninteresting. There are better varieties to focus on. Vineyards are a long commitment. Plant Petit Verdot and Merlot instead.”and tasted a 1997 Cadenza made by former owners Tim and John Crouch and then Helrich’s 2012 Allegro Cabernet Sauvignon.
