When zucchini is in season…
Personally, I don't understand the negative reviews. This recipe is in James Beard's book Beard on Bread. It never disappoints and is moist and delicious. I usually make half the recipe for one loaf, and sprinkle walnuts on top. Yummy! Also good to toast with tea.I can't rate because I made some changes, but everything worked well! I replaced 1/2 cup of the white sugar with brown. Squeezed out the zucchini to avoid excess moisture.
Used probably 3 cups of zucchini total. Omitted walnuts due to an allergy, and added dried cranberries. I cooked all the batter in a 10 cup bundt pan, checking after 40 minutes and it was done around 70 minutes, if I remember correctly. I didn't think it would bake through before the outside got too dark, but lo, it did and it was great. I glazed with a simple powdered sugar icing.Turned out great, moist and tasty. Used the walnuts on top instead of in the mix.
