In New World Sourdough, Bryan Ford shines a light on the unique breads of Latin America via nparts

“You open a book about sourdough and most people are going to say, ‘That’s the only type of bread I can make.’ That’s nottype of bread you can make with your sourdough starter,” says Ford. “I wanted to break through and say, ‘You can digest a different culture when you’re using sourdough: You can be passionate about Puerto Rico or Cuba or Colombia or Brazil.’”
Ford landed on “New World” for the title of the book as a play on both geography and philosophy. In contrast to a long-held focus on “Old World” baking traditions, he features breads that aren’t often in the spotlight outside of their respective regions . With an emphasis on method rather than amassing gear, Ford offers plenty of improvisations for the beginner. “It’s getting people into a more comfortable mindset, helping them relax,” he says, “and also helping them explore different types of bread.” Don’t have a bench scraper or banneton ? Use a chef’s knife and a bowl lined with a dish towel instead. If a baker’s couche isn’t already part of your arsenal, a kitchen towel dusted with flour will serve you fine.
