I care deeply about respecting the tomatoes I’ve waited all year to get my grubby hands on: That’s why I use a serrated knife when I’m slicing them. It might seem counterintuitive, but—unless your straight blade is sothrough a potato —a serrated knife is more delicate on juicy, slippery fruit. Because the cutting motion is across, rather than down, it can make thin, even slices, without pressing out any of the seeds.
