are water, soy protein concentrate, coconut oil, and, of course, natural flavors. A compound known as heme gives it a meaty flavor. It's not like a bean burger where you're mentally prepared in advance that what you'll eat is going to be different. These ingredients produce a flavor and texture surprisingly similar to ground beef.
We sat down for dinner, and I asked Elisabeth how she liked it. She responded with an enthusiastic "It's good!" It dawned on me that she wasn't saying. My thinking on my first bite was to reach for the hot sauce and saltines; the chili was tasty enough that my mind skipped from the bigger evaluation directly to the fine tuning. We were off to a good start.
After sautéing the Impossible Burger, I found myself nibbling at it while I did other work, occasionally going back for more, as if it were the real thing. If pressed, I'd say that the Impossible Burger had a bit more chew to it, and bite-size pieces had a bit of sponginess that was faint enough to not be off-putting.
Of course, if you ate it with reverent concentration, you could tease out differences. Eat it with less fixings or have a bun-less patty and yeah, it starts tasting a little different. But this is leaps and bounds beyond a “veggie burger” where you've mentally made peace with the idea that you are eating something else entirely.
