“It was an idea we hatched right when we were getting Kingfish,” Traverso said. “We looked down the road and thought about getting Kasper’s back. It’s a completely unspectacular building, but everybody who walks by stops and looks at it — that’s part of the appeal. There’s something about it that just draws you in. In the end, it was an outright purchase of the property. We hope to apply the approach we did at Kingfish and keep [Kasper’s] the same.
There will also be one big change. Despite Yaglijian’s wish to license the original Kasper’s name, the restaurant will re-open as Kasper Koojoolian’s — a move Peinert said will honor the founder of Kasper’s Hot Dogs.
