This vibrant, refreshing salad makes a great lunch or light dinner, but the dressing is really the star here.

June 22, 2016

Hi Marlo! I've kept the dressing in my fridge for 3 - 5 days. If I make a big batch, I tend to leave out the cilantro and the mint and then add that à la minute for my daily salads, etc.I really, really wanted to love this salad, but the dressing just didn't do anything for me - just OK at best. I used the Red Boat Fish Sauce that's aged in Bourbon Barrels and I thought it overpowered the dressing; maybe the one lime I used wasn't enough and I should have used two limes.

Scallion and Coconut Rice with Pork Recipe on Food52Scallion and Coconut Rice with Pork Recipe on Food52This fragrant rice makes for a satisfying and easy weeknight meal. As long as you have your mise en place before you start, the end is as comforting as a good risotto, though without all the stirring. As strange as it might sound, this is equally delicious and different with a can of sardines stirred into the finished rice in place of the pork. If you use sardines, serve with Korean seaweed (gim) and make bite sized hand rolls.

Warm Bread Salad with Smoked Salmon, Roasted Vegetables & Creamy Dill Dressing Recipe on Food52Warm Bread Salad with Smoked Salmon, Roasted Vegetables & Creamy Dill Dressing Recipe on Food52A fresh summer salad of roasted vegetables with meaty smoked salmon and creamy dressing. Columbia Winery's Composition Red—made with a blend of Cabernet Sauvignon, Merlot, and Syrah grapes—has soft tannins and balanced acidity perfect for a light salad or vegetable-centered meal made with a creamy dressing. Note: If you prefer to grill the vegetables and bread instead of roasting them, you can, though be sure to keep a close eye on them as they cook as the times may vary slightly from the recommended times listed above depending on what kind of grill you use.

Summer Farro Salad Recipe on Food52Summer Farro Salad Recipe on Food52I love farro for its nutty texture, and it has the same nutritional benefits as brown rice but cooks in half the time. Rather than simply cook it in water, I added some garlic, onion and parsley to the pan to infuse extra flavor. This recipe started with the Mr. asking me to cook something for his office potluck, so I decided to focus on a salad that could easily double as a side or main course for any vegetarians hoping to take part in the potluck. Studded with tiny bits of fresh mozzarella, chopped olives, onions and grape tomatoes, it's now my new favorite summer salad. The dressing is also a very versatile vinaigrette you can toss with any mixed greens for a homemade option to bottled dressings.

Poached Tuna with Warm Squash, Corn, and Potato Salad Recipe on Food52Poached Tuna with Warm Squash, Corn, and Potato Salad Recipe on Food52You're going to think I'm lazy. And you're right. I like olive oil, I like vegetables, and I like warm salads. So when I'm not feeling particularly inventive or energetic, I like to throw them all together in a single dish. Vegetables get roasted. Fish gets poached in oil (an old stand-by for me). A squeeze of lemon and a dried chile come in to give everything a kick in the pants. And I have a comforting dinner on the table without much thought or effort. We like our summer produce at Food52 -- Want us to send you another corn newsletter? Watch out, or we will! -- so I had to get just one more blast of corn and squash in under the wire. Then, soon, I'll behave and start cozying up to apples and cabbage.

Skillet-Roasted Chicken Thighs With Dandelion Greens & Baby Carrots Recipe on Food52Skillet-Roasted Chicken Thighs With Dandelion Greens & Baby Carrots Recipe on Food52I love a good one-dish meal because it is a busy cook’s romantic ideal: efficient, thoughtful and, when cooked properly, almost necessarily resulting in clean and simple flavors. Here, the recipe is exactly that: an honest dinner, cooked simply, from only four ingredients that took up space in the refrigerator. The combination, however, of well-seasoned roast chicken, tender baby carrots, slightly wilted dandelion greens, and a squeeze of lemon juice shouts of dinner's arrival in a clear tenor to the tune of no dishes or leftovers.
