by chef Philippe Verpiand and his wife and business partner Monica Bui, changed hands in February. But Hernandez delayed the announcement of new ownership as he made physical tweaks to the restaurant and gradually updated the menu with his own stamp.at 1101 Uptown Park.
"When we first began planning to open Brasserie du Parc in 2016, four years after we opened Etoile, we went to Jose to ask him to be our chef there. We were already fans of his talent and food and thought he would be a perfect fit for the new restaurant. He was, however, happy with his executive chef position at the time and had to say no," said Verpiand.
The change of ownership at Brasserie du Parc marks the full-fledged return of Hernandez to the Houston dining scene, a boon for diners who enjoyed his distinctive brand of luxurious fine dining. Hernandez was at the helm of the upscale Lucienne at Hotel Alessandra when the hotel opened at 1070 Dallas in 2017.
