For a few very carnivorous friends and me, summers before the pandemic were synonymous with not only cooking barbecue dinners in our backyards but also judging barbecue competitions.
Our deprivation has made us extra-keen to try new barbecue eateries in Ottawa. That said, there’s a world of difference between competition teams turning in highly crafted, small-batch entries and restaurants, trucks and shacks cooking a day’s worth of meat in advance and reheating food when it’s ordered. The chicken quarters that we tried were admirably moist. The meat tasted more of smoke than seasoning to me, and while spice rub on our chicken’s skin didn’t wow us, we thought the sweet-spicy house barbecue sauce was a good pick-me-up.Chicken also starred in our favourite sandwich at Brine & Grill, which is modelled after a hot chicken sandwich, complete with gravy and peas. Going in that diner-y direction struck us as both surprising and successful — we had to give it up for the gravy.
