Cook this: Lentil and mango salad from Chetna's Healthy Indian, Vegetarian via nparts recipes
Chetna Makan first tried this combination of soaked lentils and fresh mangoes at a woman named Jayashree’s house in Delhi. “It was new to me, and I have had a lot of Indian food. But apparently where comes from in the south of India, this is very, very common.”
Part of a feast including spinach and coconut dal, podi potatoes and thoran , “she cooked 10 different things in a couple of hours in her tiniest of kitchens.” Summer is the season for mangoes, and for Makan, the “revelatory” dish has since become a staple.
