Spanish-born chef Perfecte Rocher will create a mentorship program for chefs and young cooks across the San Diego company's 19 hospitality venues

Tafazoli said Rocher, who joined the company last month, will bring to CH Projects a level of mentoring experience that was lacking in the past.

“In our world, restaurant groups don’t get better as they grow. It’s tough to get a large group of people working in the same direction with the same value system, and that accelerates entropy,” Tafazoli said, adding that he’s seen too many successful restaurants dilute their brands by expanding too fast.

“I grew up with chefs throwing pans and screaming but that was the only thing you could do to get a reference, so you had no choice,” Rocher said. “But life is changing and there are now other ways for people to work and be happy. You don’t need to be yelled and screamed at to understand this job.”
