“The California drought, the California drought!” says the wizened man they call the “food professor,” Dalhousie University’s Sylvain Charlebois.
“For the price I was paying for romaine, I would have almost had to charge the same price for a caesar salad as I would for a steak,” he says. “And I really don’t think my customers would go for that. It’s just nuts. I’ve never seen anything like this before.” “We’re paying higher prices and so we’re having to charge more, but it still isn’t enough to meet the demand. I feel terrible having to charge these prices, but the reality is we’re not even breaking even for the most part.”Article content
“So we put it at $6.99 to try to make a little profit, but unfortunately, when the volume is low, the quality is often questionable, so we can’t sell every piece. We’ll sell maybe 20 pieces, sometimes not even. So do the math there. We’re just hoping to get back what we spent. We’ve even started to get icebergs from Spain, but it works out to the same price,” Pantazopoulos explains.
Like Shiller, many restaurateurs and fast-food franchisees have had to yank lettuce-based salads from their menus. Others still serving greens have had to increase prices.
