On April 15 the world-renowned and eighth generation Italian butcher joins Nightingale’s Chef Phil Scarfone for an evening of culinary collaboration. Cecchini will explain his remarkable nose-to-tail approach to butchery, showing the utmost respect for the animal. True to the spirit of Cecchini and Nightingale the dinner will be with family-style dishes presented, some carved tableside and to be shared by the room.

The fruit is farmed biodynamically with a 70/30 mix of Marsanne/Roussanne coming off four sections of the Hermitage hill where the vines average 60-years old.
